I think (think, not know) the key to it is to get in and get the kill fast, similar to a pyramidion charge. But you can't take the damage involved in charging, so you have to get the jump on your enemy.
I don't think a squid can really function the way I tend to fly my pyramidion at this point. I don't go for the quick kill anymore (well, sometimes, but I tend to use ramming to accomplish that). I go for the disable and balloon pop, then I use the weight and durability of the pyramidion along with my positional advantage to bully around my opponent until I get around to killing them. This leaves me the opportunity of focusing fire on a second opponent while I try to stay directly above the first, allowing me to engage in 2v1 situations.
A squid really can't trade fire like that, you have to get the kill and get out. I will be interested to spend some time with this and try gat-mortar.

I've heard some discussion on how the squid should get a fourth gun on it's port side. As you've given more info on the squid then I've seen most others able to do, I was wondering if you had any thoughts on that?

I don't think the squid needs another gun. For the most part I generally just use the two, often telling my crew that rear gun is just for show. Of course with a highly coordinated crew you can probably make better use of it; but that's more effort than many are willing to put in. A gun on the port side (left) gives the ship some more options, and I think it would be extremely useful in a lot of situations.
Sometimes when avoiding the enemy, you have to show them that bare side. They can't hit you, but you can't hit them, and that's really frustrating. I don't think another gun would be added to the ship, and you can do fine without it.
This guide is less about the squid, rather than the tactics involved in approaching ships in a stealthy manner. For the most part, the squid is the best choice for stealth, but other ships can pull it off. I often try to play my pyra sneaky, and it leads to a lot of great situations. Sometimes it's best not to barrel straight at your enemy, but approach them from a blindspot or flank.
Just today I was in a match on the fjords and my ally ship didn't have the most optimal build, and we were facing some experienced captains. I used a lot of evasive maneuvers and tricks to hide from the enemy before ambushing them. This lead to our ship living much longer than it had any right to, as well as getting us some good kills; even in 2v1 situations.
If there was anything to take away from this, it would be to use the clouds and terrain to your advantage, and keep in mind that the vertical axis is your friend. A lot of ships tend to forget to make good use of their up and down game. Ambush, kill one, hide in some clouds or behind terrain, do a rapid rise or descent once you lose the spot, then let them pass over/under you and ambush them as well. Regardless of your ship choice.

Would be great for some hard examples that convinces us to use stealth. Ide to make a guide on Tactical approaches, for that you need some hard evidence to show that it works. And it would also cover stuff like clouds and shieet. Why not go that far with your squid?

That was the original plan, but there's just a crazy number of options. Sometimes they work, and sometimes they don't. It really depends on how well you work with your ally, as well as how the enemy is playing the game. If they're sitting around their spawn and trying to camp, it's extremely easy to approach them. If they're rushing forward, it's really easy to ambush them. But if you don't know what they're doing, you could be setting yourself up for failure.
If you think they're camping and take the long way around to smack them in the flank, and they actually push forward; it could turn into a long game of cat and mouse. If you forget to tell your ally what the plan is, there's a high chance of them being double teamed as well.
But I am definitely looking into making some videos.
(Although the tactics work with just about any ship, not just the squid)
