Can't believe I'd forgotten about this project for so long.  I kept seeing the title and thought "Video novel" for some reason.  If you need anything, I'll be glad to help.  Though my strength is in writing, as some of you have seen, not so much in the art area.

I think it kind of boils down to the way you outfit almost any ship and the way your ally is positioned.

Chipping away at a target usually requires an ally to run interference, breaking up the enemy charge or preventing them from running in close to you.
This is reverse for the above suggested Squid builds, where in you are the interference running around like a madman causing mayhem and destruction in your path then puttering away.

But I have a feeling your describing a need for longer, tactical engagements that require depth of thought and planning.  The kill might be quickly had, but the hunt lasts longer.  Whispering glimmers of an enemy target, the sound of distant drums fading in and out.  Punctuated by the rolling thunderous crack of guns reporting on the starboard side as a target drifts out into the open.

I'd recommend the Galleon or Junker, fitted with equal sides long range and disabling options.

Today I learned what is love can be stuck in my head, and can drive me crazy.

Today I also learned tampons dissolve in toilets, the strings dont.  I snaked 12 of them out of a burst pipe so far.

Capitol ships I'd assume, forming the nerve center for a flotilla in most cases.  Though I also see them filling the Dreadnaught role, the siege breaker.

I've constructed a few narratives in my head about what these monstrosities could be like.  Mostly from the point of view of a foot soldier, the awe or horror of first seeing something that defies reason floating in the sky.

"Four days the shells fell, four days we fought and pushed back the Anvalan advance while airships screamed rockets above and guns reported across a no mans land of burnt trees and churned earth.  Then it all just stopped, the wind whistled afore as a beast took into its lungs a great breath to usher forth the death knell of Yesha.  The Naglefar's horn called out three times with a wind that bent trees and shattered a mans resolve to fight.  As the great Wolf of the north eclipsed the sun, her guns brought eternal rest to all those caught in the night cast by her bulk."

I like the place the Goldfish sits right now.  I've been able to manage a fair amount of versatility when working with the team and taking into consideration what weapons everyone is bringing to the table. 
With the right pilot tools matching good strategy and planning it is just a really versatile ship that can brawl, support at range, even be the ship killer. 

I'm also willing to say that it is on the medium scale of difficulty use for captains and crew.  Gunners need to be accurate, know their ammo types and switch them out fast while adapting to the current fields needs.  The position of the rear engine and balloon, in relation to the rest of the ship make it so the two other players on board need to communicate whose repairing what, or they end up overlapping one another too often.

The side mount guns definitely need to be taken into consideration more for use by the casual player, I haven't seen to much use of them in pugs.  Many captains might not have considered the utility of the side guns, favoring the big one in front as their go to strategy.  More experienced players have used the entire ship to devastating effect in the pugs I've been playing in the last few days.  More than a few blender fish have brought me low as well lol, though their attacks weren't unbeatable now or overly frustrating. 

I had to pay closer attention to my distance to, or when I'm in the Fish.  Been using some tactics I'd usually reserve for a squid on the fish as well, which has had some amusing results. 

And I'm very tired, I think my entire post might be incomprehensible.  I want/need coffee.
