In terms of sheer "holy shit" factor it has to be the Chasseurs Ardennais.  Specifically, from Resist and Bite, where 40 men held off a fighting force that included Erwin Rommel's 7th Panzer Division (AKA the Ghost Division).  Either that, or Smoking Snakes.

In terms of "hey that's cool" it has to be Carolus Rex or Night Witches (Which also has to be one of my favourite songs ever)

Anything on their new Last Stand album. Most of those stories have the "holy shit" factor in the stories. I agree with Resist and Bite, that is definitely up there. 40:1 is an interesting story as well, as is No Bullets Fly.
And how could I forget Inmate 4859, a story about Witold Pilecki a man who literally forged papers to get himself sent to Auschwitz.

We humans wear our ties on the base bottom of our necks, so I would say a giraffe would do the same.
