Interestingly enough, a friend of mine who has sailed boats before has said that airships and waterships have some overlap in terms of piloting techniques. He's also said that the new physics in 1.2 make the ships feel more "car-like" and less "boat-like" than before

True enough, but a captain that flies in full forward all the time is not as good as a captain that makes full use of all throttle settings. As far as I can tell the airships still turn faster the closer to neutral your throttle is set. Where as with a car you would turn faster the higher your throttle is set (to the point of spinning out). I can see the ship analogy working on a ship that has more than 1 screw (propeller) whose thrust can be set independently from the other, but most people have their boating experience with outboard motors which don't use the same turning physics as GOI ships.

The turn rates are the same while moving or stationary in GoI. Cars' turn rate (heading related) is less when they are moving faster if you are using a max-g turn. I'd say GoI boats drive more like a shopping cart.
