Oh, that's an easy one.

Most: Squid
Least: Mobula (Nothing against it, just never get around to flying it.)

Gryphos:
Most: Mobula
Least: Spire

HamsterIV:
Most: Junker
Least: Spire

My ship builds may vary wildly from match to match, but the Junker provides a good starting point for all sorts of shenanigans. I fly with a lot of new pilots and crew. I can't count on them to provide the sort of support and accuracy a Spire needs to survive a determined attack. I try taking it out when the teams are unbalanced, but then we end up getting the kills to quickly because the spire is a beast if left unmolested.

James T. Kirk:
I try to fly all ships equally, but I end up flying the Goldfish the most.

Least is probably the Mobula.
No idea on how to fly this thing with anything other than 5 Banshees.
