Pardon? I mean, sure, he does sweeping orchestral scores and whatnot but the guy loves his 1970s Emerson Lake and Palmer-style progressive rock organ pieces too. That's kind of a broad spectrum, isn't it?

that is indeed true. not everything would be the best fit for everyone but my first experience and perhaps love of airships came from the Final Fantasy series. So how could I hear any of his music and not be reminded of that sense of wonder that came with exploring some of the expansive overworlds in those great airships as well as the occasional fights that took place on them.
Lance Gilgamesh:
I'll add a few pieces of music form World of Warcraft.
Gunship Battle. http://www.youtube.com/watch?v=uLANCpGw8cU
Warships. http://www.youtube.com/watch?v=e-ucRu5VeGs
Gunships. (Sort of a longer version Gunship battle without cannon noises) http://www.youtube.com/watch?v=zokxiMizxZ0
And Operation: Gnomeregan. http://www.youtube.com/watch?v=AL-j8h0r2Q8
Machiavelliest:
I actually listen to Francois Rabbath's stuff (obscure, I know). I think the initial cello quartet in GoI made me think of it, since most of his solo pieces are him on the double bass accompanied by tabla. L'odyssee D'eau specifically (it sort of picks up into battle music around 5:30). Horda is Squid music. There are others, but they're not hosted online.
Sgt. Spoon:
Another goodie from Caravan Palace: https://www.youtube.com/watch?v=2qjomu9K0Xk
and oh, the OST from Greed Corp: https://www.youtube.com/watch?v=zqGLmkxtKcU&list=PL321BC3E103A74C7D
(if you haven't played Greed Corp you should take a look at it. It's a funny little game with rather cute steampunk graphics. Though the gameplay isn't too deep)
